Wine and its Surroundings

Wine is a complete world of creation. It requires a great deal of skill, knowledge and experience to succeed on a regular basis. However, one can not overlook a final factor in producing excellent wines – patience.

 

The winemaker must be patient when examining the vineyard. Which block should be used for a specific wine, how should it be managed, which should be picked first and at what sugar and acid levels? In the winery, decisions concerning crushing and fermentation, pressing, racking and countless other aspects must be considered. The winemaker must examine, one after the other, hundreds even thousands of wine samples, from different barrels, different varieties and different blends. After blending, patience is required while the wine is aging in barrels or in tanks, and finally the wine must stabilized and filtered before bottling. Finally, patience is a must while waiting for the finished wine to develop in the bottle sometimes after many years.

The same degree of patience is also required from the taster. We believe that in order to properly appreciate wine, it should be given some time not only in the bottle, but in the glass as well.
